Sorry so late!

It has been awhile since we posted an entry but we have been very busy with our "lifestyle change."  We are blogging all about it on our food blog, www.lifepreservatives.com.  Dave and I watched some movies about the origins of our food and we were so horrified that we decided to move to an all organic food lifestyle.  So far so good.  Check out the blog for more details!

Below, I posted some pictures from our wedding.  I know its 6 months later, but better late then never right?  Enjoy!

Holiday in Hawaii

Every year for Christmas we usually head down to Palm Desert, CA where David's parent's live.  This year we were fortunate enough to be able to celebrate an early Christmas with them in Kauai, Hawaii.  We only spent 4 days there but it was just enough time to kick back and relax, do some sight seeing and shopping.  We stayed at the Marritt Waiohai Beach Club Resort.




Our first day we did some exploring in the area and then went to a Luau at the Hyatt Hotel.  I had already been to a Luau once before, but this one was much different and the food was much tastier.


Our second day we all just let the breeze take us away.  Dave and I decided to snorkel in the resort's cove. Looking at all the fishes was so pretty and calming until Dave saw a  HUGE fish and then we were a little more cautious not to go out too far.  I do think that snorkeling in Hawaiian waters is something I t everyone should try at least once!  We also tried a famous Puka Dog, which is a Polish Sausage in a bun with a hole in it that had a garlic mayonnaise, fruit relish and a Hawaiian mustard.  I know it sounds gross but it was pretty spectacular!




On our third day we went on a helicopter ride around the Island of Kauai.  I have to say that this was one of the most amazing experiences I had ever had in my life.  Dave and I were more excited than nervous for this excursion.  The tour lasted an hour and it was so beautiful.  We had a bird's eye view of everything from where Jurassic Park was filmed, to the Waimea Canyon, Na Pali Coast, Hanalei Bay and the Wailea Falls.  Among the famous spots we saw many other breath taking views of the other canyons and waterfalls.  We then had lunch at the Duke's Restaurant next to another Marriott Resort then had Dinner at Roy's Restaurant (great food).










On the last day of our mini vaca we just relaxed all day.  Dave and I tried to soak up the last bit of sun before we had to headed back to Seattle.  Our trip ended with a wonderful dinner at the Plantation Restaurant (scrumptious food!)

Hawaii definitely had so much natural beauty that couldn't go undocumented.  We tried to capture as much as we could on film.

Cookin' like Crazy

So I have been cooking a lot more lately.  I have tried a new recipe every day for the the passed month.  I have posted 3 of my new recipes I have mastered and now have under my belt.

Below is chicken breast stuffed with asparagus wrapped with prosciutto, topped with a Feta Dijon sauce, oven backed asparagus and brown rice.


This is my Saffron Scallop and Shrimp Risotto (the base of the recipe is from Cooking Light 2009 Annual Recipe book which I modified a little)   I have posted the different steps I took preparing this.

 

 




This was part of tonight's meal.  I made Steamed Shrimp Wontons with Spicy Peanut dipping sauce (recipe from Cooking Light 2009 Annual Recipe book)

My Adventures of Cooking

Before I got married, I used to only liked to cook for parties or cookouts.  Now that I am married, I am trying to make more of a conscious effort to cook every day and expand my recipe repertoire.  I am pretty proud of my self.  I have made a pot roast all by myself which was pretty tasty and the Castro side of the family actually liked it!  I also have been using cook books I got for the wedding.  I also made chicken pot pies!  They were also very tasty!  Take a look at the before and after pics!
